HP sauce is a highly spiced English sauce that contains a number of exotic fruits, spices and malt vinegar. Including both dates and tamarind fruit. A clear legacy of Britain's colonial past. The malt vinegar is what turns the sauce brown and gives the rich texture. HP highlights and enhances the taste of what it is served with, and provides a balance between salty - sour and sweet - bitter. Among other things, the malt vinegar also gives the dish the so-called fifth taste - umami. HP sauce is suitable for all kinds of food and is served cold with both cold and hot dishes. Fried eggs and bacon is a standing classic but it works just as well with fries. Or why not with the nice piece of meat - or the fish!
